The six expressions are the finished work. This is the bench they came from: the one-off batches, the botanicals still being tested, the ideas that might be the best thing I have made or might get poured out.

What happens here

Every so often I take the still somewhere new. A native botanical I have never distilled, a maceration pushed too far, an idea I cannot let go. Some become the best gin I have made. A few I pour out. Most are made once, in runs of twenty or thirty bottles, and never repeated.

If you read the back of the bottle, and if “made once and never again” sounds like a reason to buy rather than a risk, this is your list. You will not hear from us often. When you do, something worth pouring is ready, and there is not much of it.
