Tangelo season

The tangelos came in from the grove last week. These are the same trees I’ve been pulling from since Grove started – a small orchard out past Te Puke that doesn’t spray. The fruit’s smaller this year but the oil in the peel is intense. You can smell it from across the room when you zest them.

Grove is always better when the fruit is slightly underripe. More tension between the bitter pith and the sweet oils. I wait for that window every year.
